On the Inca Trail you can only walk with a licensed operator, and you sleep in tents at official campsites that the Ministry of Culture assigns with your permit. Your crew carries and pitches the tents and cooks all meals, so you book nothing on the trail itself. Book a hotel in Ollantaytambo or Cusco for the night before and in Aguas Calientes for the night after, and book your trek 4 to 6 months ahead.
